CCC&TI Announces Fall Caldwell Cuisine Schedule

Caldwell Community College and Technical Institute’s Culinary Arts program has announced the dates and menus for its fall semester installment of Caldwell Cuisine. Each of the meals will be served at 6 p.m. at the J.E. Broyhill Civic Center in Lenoir and are priced at $30.89 per person, which includes all taxes and fees. The events are open to the public, but diners are required to purchase tickets prior to the event.

In addition to providing an opportunity for the community to enjoy the gourmet Caldwell Cuisine menus at a reasonable price, the events also provide CCC&TI’s Culinary Arts students a chance to apply their classroom knowledge. Chefs preparing a meal

Following are the dates and menus for the events:

  • Thursday, Sept. 15 - India
    Starter: Ginger Spiced Cauliflower Soup (ginger, turmeric, cumin, coriander)
    Entrée: Chicken Tikki Masala (garam masala, tomato, pepper, coconut milk)
    Served with: Chickpea Chaat (tomato, onion, crispy dough, cilantro-mint chutney) and Caraway-scented basmati rice
  • Thursday, Oct. 6 - Greece
    Starter: Greek Salad (tomato, cucumber, olives, feta, oregano, lemon, olive oil)
    Entrée: Shish kabob with Tzatziki (lamb, cremini, zucchini, onion, red wine, oregano)
    Served with: Greek Rice Pilaf (tomato, pine nuts, currants, sage)
  • Thursday, Nov. 17 – The Americas
    Starter: Braised Beef Empanadas (Central, South America – tomatillo, onion, cilantro, chimichurri)
    Entrée: Oaxacan Mole de Pollo (Mexico – braised chicken, corn tortilla, Pico de Gallo, cilantro, cotija cheese)
    Served with: Frijoles Giusados (stewed pinto beans) and Arroz Verde (baked rice with cilantro, poblano, onion, garlic)

MoonJoy Meadery will provide drink options for the September and October dinners, and Twisted Vine Winery for the November dinner.
